On this ever changing retirement journey, living a basic, quality retired life, before buying anything I have to ask “is this a need or a want”. The needs (housing, food, medical, car, etc.) get priority, then wants are prioritized. Hopefully a little left to start the next month.
On this visit I use the pot roast cooked on Sunday to make a sandwich. And I make an apple salad to go with it for a new item.
The boneless chuck roast cost $7.99/lb, total of $9.91. With the potatoes and carrots and mushroom soup, this coast $12 and it makes at least 6 meals. $2 per meal. The apple salad will make 3 meals for about $1.00 total. With careful planning, and making my bread and meals, I can have basic, delicious, nutritional meals and stretch my food dollars.

CROCK POT POT ROAST
11/5 lb boneless chuck roast
2 medium size potatoes, peeled and cut in cubes
6-10 baby carrots
1 medium onion quartered and sliced
1 can or 1 cup fresh green beans
1 can mushroom soup
1 can water
Salt and pepper to taste
Layer in 2 qt.Crock Pot as listed
Cover and set on high, leave it to cook for 3 hours
Check on roast, move vegetables and soup around to cook evenly, but do not stir or mix ingredients. Cover and cook 2-3 more hours.
The meat will be fall apart tender and veggies cooked perfectly.
A complete meal with delicious gravy. Refrigerate leftovers to be used for more meals or roast sandwiches.
APPLE SALAD
1 apple of choice cored and diced
Choice of ingredients— raisins, sliced grapes, dried cranberries or cherries, chopped pecans or walnuts, mini marshmallows— about 1/4 cup of choice
1 tablespoon mayonnaise
1 tablespoon Greek style yogurt
Mix well, adjust ingredients to your preference
Refrigerate, good for 2-3 days
MAYONNAISE
1 egg in tall glass— room temperature
1 teaspoon lemon juice
1 teaspoon vinegar
1/2 teaspoons sugar
Pinch salt
3/4 cup canola or safflower oil
Use immersion blender, 1 minute or until well blended
Taste and add more sugar or salt as desired, garlic may be added
