At five in the morning, the first wisp of smoke was lit at the Zhangwan Market in Tongzhou. This bustling market in Zhangjiawan Town, Tongzhou District, is adjacent to the Grand Canal and surrounded by large communities such as Taiyu Garden, Zhangwan Village, and Tuqiao Village. It is densely populated, and the third and eighth days of the lunar calendar are market days. On the eve of the Spring Festival, there are crowds of people and it is very lively. At this time, the Zhangwan Market has become the most vigorous magnetic field of the New Year in the suburbs of Beijing - colorful flags are strung into a long dragon, and the steaming heat and hawking sounds break the severe winter cold. Under the plaque of "Zhangwan Market", a carnival about the tip of the tongue and tradition is boiling.
Pushing aside the crowd, the rich aroma of stewed fire-baked bread first invades the nose. In the three-foot-wide iron pot, pig intestines, lung heads, and fried tofu roll in the sauce-colored old soup, and the master's copper spoon stirs it to set off the tempting aroma. Stewed fire-baked bread, this old Beijing snack originated in the late Qing Dynasty, has become the most heartwarming delicacy in winter with its rich sauce aroma and rich taste. At the next stall, with a "sizzle", the snow-white dough bloomed into golden fried cakes in the oil pan. When the crispy shell was bitten, the hot red bean filling flowed out, which was both sweet and ironing.
Turning around the grain and oil area, the perfect fusion of modern and traditional was staged in front of the noodle stall - the improved machine noodle cutter rumbled, and two sharp knives were arranged on the edge of the pot, waving alternately to cut the dough into uniform willow-shaped noodles, and accurately flew into the boiling pot. The most amazing thing is the old way of iron pot sticky pancakes: corn flour hits the edge of the pan with a "pop", and the charred shell gradually forms in the rising steam. When the lid is opened, the golden pancake exudes a rich corn aroma. Some pancakes are added with chopped cabbage, adding a touch of freshness; some are pure coarse grain pancakes, simple and unpretentious but full of local flavor.
