Well finally…..here it is for you guys. My highly requested tamales recipe. This recipe is very, very dear to my heart since I have so many wonderful memories making tamales with my mom and sister growing up. Oh, how I miss them and wish they were still here so we could do this again.

👩🏻🍳 BELIZEAN PORK TAMALES
👩🏻🍳 MEAT:
4 pounds pork shoulder or butt roast
1 ½ tablespoon Morton Season-All seasoned salt
1 ½ tablespoon Badia complete seasoning
½ tablespoon black pepper
1 ½ teaspoon cumin
½ cup onion, chopped
3 cloves garlic, chopped
👩🏻🍳 CULL/COL: RED SAUCE
9 cups water
1 ½ pound corn dough
½ cup culantro
2 packets Sazon Goya con culantro y achiote
1 tablespoon tomato paste
½ teaspoon Belizean achiote paste
1 hot pepper of your choice
½ teaspoon salt
👩🏻🍳 MASA:
2 pounds corn dough
1 ½ teaspoon salt
1/3 cup lard, melted
1 cup water
This recipe makes 17-18 tamales. Enjoy!
