Beef Jerky
2 Lb Sirloin, Thinly Sliced
2 1/2 tsp Seasoning of Choice
1) Thoroughly coat the sirloin with the seasoning in a bowl. Cover and let marinate in the fridge for 4-12 hours.
2) Lay the strips of sirloin onto dehydrator racks. Set the heat to 160F and let dehydrate for 4 hours and 20 minutes. Let cool and store in an air tight container.
Kickin' Deviled Eggs
4 Eggs, Large, Hard boiled (12 minute egg)
1/8 tsp Salt
Pinch Black Pepper
2 Tbsp Sour Cream
4 Dashes Hot Sauce
2 Tbsp Bacon Crumbles
1) Split the boiled eggs in half. Place the egg yolks into a bowl and set the egg whites aside.
2) Season the yolks with the salt, pepper, hot sauce, and sour cream. Mix with a fork until smooth. Use two spoons and add the egg mixture back into the egg white halves.
3) Top each egg with the bacon crumbles. Refrigerate for 20 minutes and serve.
Smoky Baked Chicken Wings
3 Lb Whole Wings
2-3 Tbsp of 50/50 Smoke Stack/Steak Dust OR
*Smoky Seasoning*
2 Tbsp Smoked Paprika
1 tsp Granulated Garlic
1/2 tsp Granulated Onion
1/2 tsp Chipotle Powder
2 Tbsp Salt
1) Preheat the oven to 400F.
2) Add all of the spices to a bowl and mix to combine.
3) Season the wings thoroughly and place onto a parchment lined baking sheet. Place into the oven for 30-35 minutes or until the wings have at least an internal temperature of 165F. Serve.
Bacon Wrapped Sausage Guys
1 Lb Smoked Sausage (preferably conecuh)
12 Oz Thick Cut Bacon
1) Preheat the oven to 375F
2) Cut the sausage into bite sized pieces. Cut the bacon in half.
3) Wrap the sausage in the bacon and hold together with a toothpick. Repeat until all of the ingredients are used up. Place onto a parchment lined baking sheet.
4) Place into the oven and cook for 20 minutes or until the bacon is to your desired done-ness. Serve hot.
