~ Compound Butter ~
1 cup Butter- room temperature
2 teaspoons Sea Salt
2 Tablespoons Garlic Powder
1 Tablespoon Fresh Thyme- minced
2 Tablespoons Fresh Rosemary- minced
1 teaspoon fresh- minced
1 Tablespoon Onion powder
1 teaspoon Black Pepper

~ Homemade Turkey Gravy ~
3 cups Turkey Drippings- add Chicken Broth if needed.
1/4 cup Butter
1/4 cup Flour
salt and pepper to taste

~ Cornstarch slurry to thicken ~
3 Tablespoons Cornstarch
4 Tablespoons Cold Water

If you need to add seasonings to your gravy, add onion powder, garlic powder, salt, pepper, and-or poultry seasoning.

- Use a digital thermometer.
-Cook Turkey until the internal tempreture of your turkey is 165 degrees F.
I used a 13 lb turkey, but the herb butter will be enough for a turkey that is within 5 lbs.
- Be sure to thaw your turkey a couple days earlier than you plan to cook it. It's better to have it sitting in your fridge ready to go.
- Take your turkey out of the oven for an hour before baking it. It will cook more evenly if the chill is gone.
- Wrap in foil during cooking and remove the foil the last 15 minutes of cooking to get that crispy golden skin.
- Add a couple cups of chicken or turkey broth to your roasting pan before cooking so you will have rich drippings.
