苦瓜鱼片汤 雨天的时候来一碗 超爽 希望大家会喜欢

苦瓜鱼片汤材料:
鱼片 大约 150克- 200克
适合鱼类:
金目炉(Seabass)
尼罗红 (Tilapia)
石斑鱼 (Groupers)
多鳗鱼 (Toman)
等等...
苦瓜 大约 200 克
番茄 1 粒
蒜头 2 粒
小辣椒 2 条
江鱼仔高汤 400克
清水 400克
鱼露 1 汤匙
绍兴酒 1 汤匙
Ingredients :
Fish Fillet 150 g
Bitter Gourd 200 g
Tomato 1 Pcs
Garlic 2 Pcs
Chili Padi (Hot Chili)2 Pcs
Anchovies Stock 400 g
Water 400g
Fish Sauce 1 Tablespoon
Shaoxing Wine 1 Tablespoon
Ingredients (Diana Aw)
1. Toman fish (rub with 1/2tsp salt and some water, then rinse with water. Drain and pat dry) Marinate with 1/3tsp salt, little pepper, 1tsp shao xing, 1tsp oil, 1tsp corn starch
2. Bitter gourd 200g discard the seeds and cut thin slices. Rub the bitter gourd with 1tsp salt till water is extracted. Set aside for 30min. Wash and drain dry
3. Tomato x1 cut diced
4. Garlic x1 minced
Method
1. Heat wok with little oil, stir fry the garlic till golden brown. Set aside
2. Boil a wok of water and blanch the bitter gourd for 10sec. Set aside
3. Next, blanch the fish for 10sec and set aside
4. Prepare claypot with some anchovies soup and water (ratio 1:1). Once boil, add in tomato and 1tbsp fish sauce.
5. Once boil, add fish and bitter gourd.
6. Once boil, add shao xing, followed by oil and fried garlic
7. Serve and enjoy! 💕
