Indian Food You Have Never Heard Of- Assamese Black Sesame Chicken (Til Dia Murgi) cooked with Bamboo Shoots (Video Tutorial)
In this video I am sharing a very rustic and traditional curry recipe from Assam (India) called Black Sesame Chicken (Til Dia Murgi) served with Aloo Pitika (Assamese Mashed Potatoes). Legendary cook Gordon Ramsay learned to cook this curry when he visited Assam. The curry is unique because it is different from the mainstream Indian food and largely remains unknown in the mainstream food scene outside the state of Assam. Please watch till the end as I am sharing some authentic cooking techniques and interesting food facts that you have not heard before related to Indian food.
Black Sesame Chicken
These are the steps before preparing the curry- Marinate the Chicken with turmeric, toast black sesame seeds and grind using a blender, chop onions, chop pickled bamboo shoot, prepare ginger and garlic paste and slit red chillies. To cook, heat a pan and add mustard oil. In the video I have talked in detail about the importance of mustard oil in Assamese cooking. Once the mustard oil lightens its color, add bay leaf and cinnamon stick. Then add the onions; allow the onions to turn light golden. Then add chicken and let it partially cook after which add ginger and garlic paste. Once the paste loses its raw flavor add the red chillies and Kashmiri Red chili powder which is low in heat and rich in color and flavor. Then add cumin powder and mix well. Once the spices are cooked add the sesame paste. Allow the black sesame paste and spices to mix well for 5-10 min. Then introduce the chopped pickled bamboo shoot. Simmer for 5-10 min and turn the flame down. Garnish with fresh coriander leaves.
How to Make Assamese Mashed Potatoes (Aloo Pitika)
Aloo Pitika ( Mashed Potatoes) is a quintessential Assamese side-dish, which is extremely flavorful and reminiscent of the traditional healthy cooking techniques from the region. To prepare Assamese Mashed Potatoes quarter potatoes and boil until fork tender. Once the potatoes are done, peel the skin and mash them. For the dressing slice shallots, chop chillies and roughly chop fresh coriander leaves. Mash them in a mortar & pestle. In the video I have explained why this process is important. Add the dressing to the mashed potatoes, sprinkle of salt, lime juice and drizzle of mustard oil. Mix everything well and the mouth-watering mashed potato side dish is ready!
