Braised New Zealand Lamb Shanks with Smooth & Creamy Mashed Potatoes, Minted Green Peas & Red Wine Sauce

Instruction & Ingredients:
NZ Lamb Shanks x 2
Prepare Mirapoix
Carrot x 1
Onion x 1
Celery (frozen/fresh) - 1/2 cup
Season Lamb Shanks with Salt
Pan Sear the Lamb Shanks
with Cooking oil (any sort)
Sautee Mirapoix (Carrot | Onion & Celery)
add in Tomato Paste x 2 tbsp
add in Red Wine (any sort) - 250 ml.
simmer for 2 mins
add in 1 tbsp Whole Peppercorns
Bay Leaf × 1
Thyme - few sprigs
Rosemary herbs - few sprigs
(save some for plating)
add in pan seared Lamb Shanks back
in the pot
pour in water - 2 to 3 cups or enough
to semi submerge the Lamb Shanks
add Beef Stock - 2 tbsp
Let it boil then simmer for 1 1/2 to 2 hours
whilst waiting - make a Smooth & Creamy Mashed Potatoes & Minted Green Peas

Smooth Creamy Mashed Potatoes:
Boil 3 x Starchy Potatoes
strain to have a smooth texture
on low heat add 1 tbsp butter
then add in 1/2 cup Cream
Salt - 1 tbsp
Ground Black or White Pepper - 1/2 tsp
Done. Then set aside.

Minted Green Peas:
simmer Water - 1/2 cup
add in: butter - 1 tbsp
Salt - 1 tsp
Ground Pepper 1/2 tsp
Green Peas - 1 cup (fresh or frozen)
Mint Leaves - 4 to 6 leaves

Beurre Manie (thickener)
combine 2 tbsp flour & 2 tbsp soft butter

for Presentation:
Balsamic Vinegar (optional)
& Rosemary Herbs

Preparation & Cooking Time: 2 1/2 to 3 hrs

makes 2 servings
