Brandy’s Scalloped Cheesy Potato Recipe

Ingredients:
• 1 stick butter
• 2 tbsp flour
• 1 cup heavy whipping cream (or half and half)
• ½ cup chicken broth
• 1 cup sharp white cheddar, shredded
• ½ cup Parmesan cheese
• ½ cup queso cheese
• ½ block Velveeta, cubed
• 1 cup sharp cheddar, shredded
• ½ cup cooked bacon, crumbled
• ½ cup diced onions
• 4-5 russet potatoes, thinly sliced (skin on)
• 1 tsp garlic powder
• Salt & pepper to taste

Instructions:
1. Make the Cheese Sauce:
• In a saucepan, melt the butter over medium heat.
• Add flour and whisk until smooth (creating a roux).
• Stir in heavy whipping cream and chicken broth, whisking to combine.
• Gradually add all cheeses, stirring until melted and smooth.
• Mix in bacon, onions, garlic powder, salt, and pepper.
2. Assemble the Dish:
• Arrange sliced potatoes in a greased baking dish.
• Pour the cheese sauce evenly over the potatoes.
3. Bake:
• Preheat oven to 375°F.
• Bake uncovered for 40-45 minutes, or until potatoes are tender and the top is golden brown.
