Expochurrasco – International Barbecue Festival, which marked the launch of the seal of Porto Alegre, in southern Brazil, as the Capital of Barbecue, was a grandiose event. More than 40 stations with barbecue chefs from Brazil and abroad, prepared countless different roasts, in a profusion of aromas and flavors that infected thousands of visitors.
From the traditional beef ribs roasted for eight hours, to lamb on the skewer, exotic alligator and ostrich meats, Moorish pork, smoked flank steak, whole roasted buffalo, shoulder of sheep, pork prime rib, tomahawk, achuras (liver and kidney) to Uruguayan parilla and even authentic sun-dried meat from the Northeast of the country, among others. Not to mention the side dishes, a separate chapter of delicacies.
Decidedly, the hard part was resisting and controlling the urge to try a little bit of everything.
