We experience an unusually long warm spell paired with windy weather, causing much of our snow to melt while we are working on building a shop workbench for Eric this week. With the new bench and wood stove hearth complete we make corned caribou for a spectacular winter dinner with lemon blueberry crumb cake for dessert.

*Substitutions and additions made*
Blueberry Jam
- replaced sugar with 1/2 cup spruce tip syrup
- added lemon zest
Streusel
- added lemon zest
Batter
- reduced amount of sugar to 1/2 cup
- added lemon zest
- substituted part of sour cream with kefir yogurt (1/3 cup)
- used 1/3 cup heavy cream in place of whole milk
Icing (did not follow recipe)
- 4 ounces cream cheese
- 1/4 cup heavy cream
- lemon zest + 1/2 lemon juice
- 4 tbs honey
