180g 棉花糖
60g 牛油
5粒 咸蛋黄 (喷上白米酒去腥)
20g海苔肉松
60g 奶粉
160g 咸饼
做法:
1. 将咸蛋黄放入预热好的烤箱,设定180度/8-10min 烤香,压碎
2. 干净的主锅, 放入棉花糖和牛油,设定10分钟/100度/速度2 融化
3. 加入咸蛋,设定20秒/100度/速度2混合
4. 加入肉松,设定20秒/速度2 混合
5. 加入奶粉,设定20秒/速度2 混合
6. 加入咸饼,设定10秒/反转速度2 混合
7. 把雪花酥团倒入不粘盘内,等雪花酥团稍微凉,带上手套,用双手不停往外翻,直到饼干都被千丝万缕的糖包裹着
8. 在不粘盘上撒上肉松,把雪花酥团放在不粘盘上,慢慢推压紧实雪花酥团,然后进一步借用塑料刮板整形成方形。
9. 塑型好的雪花酥撒上肉松
10. 放凉后,用刀把雪花酥切成大小一样的方块,可根据自己的喜好来切
Salted Egg Pork Floss Snowflake Crisp
180g Spun Sugar
60g butter
5 salted egg yolks (Spray with white rice wine to remove fishy smell)
20g seaweed meat floss
60g milk powder
160g salty Crackers
practice:

3. Add salted egg, set 20 seconds/100 degrees/speed 2 and mix

5. Add milk powder, set 20 seconds/speed 2 and mix
6. Add salted crackers, set 10 seconds/reverse speed 2 and mix
7. Pour the snowflakes into the non-stick pan, wait for the snowflakes to cool slightly, put on gloves, and turn them out with both hands until the cookies are covered with intricate sugar.
8. Sprinkle the meat floss on the non-stick plate, put the snowflakes on the non-stick plate, slowly press and firm the snowflakes, and then use a plastic scraper to shape into a square.
