蘸酱麻薯
麻薯材料:
100g 糯米粉
20g 木薯粉
180g 牛奶
10g 牛油
1. 在容器抹上油
2. 无油无水干燥的主锅,将糯米粉和木薯粉倒入主锅,设定20秒/速度4 过筛
3. 倒入牛奶,设定20秒/速度4 混合均匀
4. 将混合物过滤倒入已经涂好油的容器,盖上保鲜纸,在保鲜纸上戳几个小孔
5. 在主锅内加入 500g的水,架上蒸锅,放入容器,设定30分钟/Varoma/速度3.5 (不要使用太厚的碗,会需要更长的时间蒸熟)
6. 蒸好之后,放入牛油,趁热搅拌,稍微待凉后双手戴上手套,将面团取出,用双手来回拉扯至有弹性。(可以参考影片做法)
7. 盖上保鲜膜备用
海鹽奶蓋
30g Cream Cheese
100g Whipping cream
10g 細沙糖
1g 鹽
50g 牛奶
1. 干净无油无水主锅,加入cream cheese,不限时间/设置速度3/3.5 打发 (可以透过洞口查看状态)
2. 加入牛奶,不限时间/设置速度2搅拌均匀
3. 倒入容器冷藏备用
麻薯外层的粉可以准备
黄豆粉
可可粉
抹茶粉
紫薯粉
草莓粉
蘸料可以准备
杏仁片
黄油脆片
oreo碎
焦糖饼干碎
或其他你喜欢的配料
组装:
1. 将麻薯用拇指和食指压出原形,放入粉中,均匀裹上粉,放入碗中备用
2. 在容器中摆放裹好粉的麻薯,奶盖,蘸料。
3. 先将麻薯沾上奶盖,再沾上配料,塞入嘴巴,慢慢享用😆
Sesame-coated glutinous rice balls with milk foam topping
Ingredients:
100g glutinous rice flour
20g cassava flour
180g milk
10g butter
1. Grease a container with oil.
2. In a dry and clean main pot, pour the glutinous rice flour and cassava flour, set to 20 seconds/speed 4, and sift.
3. Pour in the milk, set to 20 seconds/speed 4, and mix well.
4. Filter the mixture into the oiled container, cover with cling film, and poke a few small holes in the cling film.
5. Add 500g of water to the main pot, place a steaming basket on top, put the container in the steaming basket, set to 30 minutes/Varoma/speed 3.5 (do not use too thick a bowl, which will require a longer time to steam thoroughly).
6. After steaming, add the butter, stir while hot, let it cool slightly, put on gloves, take out the dough, and stretch it back and forth with both hands until it is elastic (refer to the video for the method).
7. Cover with cling film and set aside.
Milk foam topping:
30g cream cheese
100g whipping cream
10g granulated sugar
1g salt
50g milk
1. In a clean and dry main pot, add the cream cheese, set to unlimited time/speed 3/3.5 to whip (check the state through the hole).
2. Add the milk, set to unlimited time/speed 2, and stir well.
3. Pour into a container and refrigerate for later use.
Coating for the outer layer of glutinous rice balls:
Soybean flour
Cocoa powder
Matcha powder
Purple sweet potato flour
Strawberry powder
Dipping sauces:
Almond slices
Butter crisps
Crushed Oreo cookies
Crushed caramel biscuits
Or other toppings you like.
Assembly:
1. Use your thumb and index finger to press the glutinous rice balls into their original shape, coat them evenly with the coating, and put them in a bowl for later use.
2. Place the coated glutinous rice balls, milk foam topping, and dipping sauces in the container.
3. Dip the glutinous rice balls in the milk foam topping and then in the toppings, and enjoy them slowly! 😆
