Hello everyone 👋🏽 This is a Candied Pineapple tutorial that doesn’t include any Corn Syrup in the recipe. Since my years of making candied fruit. The question I get all the time is “ is corn syrup necessary?” I prefer to use corn syrup always in my candied fruit recipe but I do make substitutions for customers who prefer not to have corn syrup added. Also I use vinegar as well when I notice that I had ran out of corn syrup. Lol. Corn Syrup is used when cooking candy mixture because it contains glucose. The glucose contains enough acidity to keep sugar from crystallizing which gives you that shiny and smooth appearance in your candy mixture which makes for beautiful candied fruit. Vinegar acts as a same acidic element that aids in the same properties as the corn syrup. Candied pineapples (no corn syrup): 2 cups of sugar 1/2 cup of water 2 tbsp of white vinegar Any acidic liquid can work well in this recipe.
