Ingredients:
I tin of sardines in tomato sauce, with a net weight of 425 gms.
2 medium sized onions, chopped
5 cloves garlic, cut into small bits
3 medium potatoes, cut into quarters, lengthwise
3 stalks curry leaves
1 longish purple brinjal, cut in half and each half cut into two, lengthwise
1 tsp mustard seeds
¼ tsp fenugreek seeds
1 tsp fennel seeds
600 ml water
100 ml coconut milk
2 tbsp cooking oil
Salt to taste
Masala Paste:
3 tbsp chilli powder
4 tbsp fish curry powder
1 tsp coriander powder
1 tsp turmeric powder
Mix masala powders with water to form a paste.
