# Cannoli #Cannoli Siciliani #cannolirecipe To print recipe & directions: https://alessandrasfoodislove.com/cannoli-recipe-cannoli-siciliani/ Ingredients:- For Cannoli shells 2 cups all-purpose flour 3 tablespoons shortening 2 tablespoons of sugar 2 yolks and 1 egg white 1 egg white (will be used to seal cannoli dough) 1/4 cup Marsala wine 1 pinch salt 1 pinch cinnamon 2-3 cups of frying oil For Cannoli cream:- 15 ounces whole milk ricotta cheese (420 grams) 1 cup confectioners sugar Pinch of cinnamon 1/4 tsp vanilla extract 1/4 cup chocolate chips To decorate:- 1/4 chocolate chips 1/4 crushed pistachios Confectioners sugar for dusting Directions:- For making cannoli shells: Step#1- In a food processor add all the dry ingredients, pulse a few times to mix. Add the shortening and pulse for a minute. Add the Marsala wine and eggs. Pulse for a minute until a dough form. Step#2- Move to a work surface and work for 3 to 4 minutes until smooth. Cover in plastic wrap and let it rest for 30 minutes. Step#3- Cut dough into 3 pieces and roll out one piece at a time. Cut circles of 2 1/2 inches for small cannoli, 3 3/4 inches for large cannoli. Step#4- Roll each circle with a rolling pin forming an oval shape. Step#5- Place the cannoli mold in the center and overlap middle and secure by wetting with egg wash and pressing down gently. Step#6- Once cannoli are all prepared in a small pot filled with oil bring to 350 degrees Fahrenheit. Gently add the cannoli in and fry for a minute or more until golden brown in color. Step#7- Remove and drain on a paper towel. Remove cylinder mold and cool completely before filling. For making cannoli cream:- Step#1- In a mesh colander over a bowl add the ricotta and let it drain in the fridge for 24 hours. This is a must otherwise the cream will be runny. Step#2- With a handheld mixer whip the ricotta and slowly add the confectioners' sugar. Step#3- Add the cinnamon and vanilla. Step#4- Once the cream is light and smooth fold in the chocolate chips. Step#5- Refrigerate until ready to use. For assembling cannoli:- Step#1- Use a piping bag with star attachment to fill the cannoli with the cream. Step#2- Gently dip ends of cannoli in chocolate chips or crushed pistachios. To enjoy a perfectly crunchy cannoli only fill before serving. Sprinkle with powder sugar and enjoy!
