This was a delightful creation and one that turned out far better than expected!
High in protein, a good source of animal fats.
It is a deconstructed Danish since traditional Danish is cooked all at the same time. Here, I bake the base first, then add the cream cheese center and bake a bit longer.

Danish Base Ingredients
340g/12oz ricotta cheese
130g/1/2C +1T softened butter
4 eggs
3g/1tsp beef gelatin
12g/2 1/2tsp baking powder
180g/1 2/3C milk protein powder
2g/1/3tsp baking soda
1g/1/4tsp cream of tartar
5.1g/1tsp glycine powder
25g/5tsp almond extract
Preheat oven to 325/165
Bring cheese to room temperature to soften.
Put protein powder, glycine, baking soda, and cream of tartar in a sifter to use later in the recipe.
Gather all ingredients. I pre-measure for quick assembly.
In a large bowl...
To your softened cheese, add melted butter. Using electric mixer, mix well.
Add in one egg at a time, 4 total, and mix well after each.
Add baking powder and beef gelatin and mix well. It will start to get 'fluffy' a little bit.
Add almond extract and mix well.
Sift protein powder et al over wet ingredients and gently hand stir and fold together. Do not overmix.
Shape dough. It is light and fluffy and delicate. I made 5" rounds that were about an inch high.
Bake 20 minutes.
Cream Cheese Ingredients
227g/8 oz cream cheese, softened
4g/1tsp vanilla extract
5g/1tsp lemon juice
1 egg yolk
Set oven to 300/149
Allow cream cheese to come to room temperature.
Mix all ingredients in a bowl.
Spoon mixture on top of base/Danish and bake 10-12 minutes to cook egg yolk.

If you do not have access to milk protein powder, you can make your own using casein protein powder and whey protein powder.
80% whey and 20% casein is the ratio. 80/20.
