The typical style of knife used for chip carving is not ideal for old-world style chips. The two primary draw-backs are the angle of the blade relative to the handle and the thickness of the handle. These features, which are great for traditional chip carving, makes it more difficult to do larger or more intricate old-world style chips. So I use an entirely different form of blade for my old-world carvings.
