This short and easy chicken broccoli cheddar pasta recipe is ideal for anyone who loves simple cooking. In just 25 minutes you can conjure up a hearty and creamy dish with tender chicken, crunchy broccoli and melted cheddar - perfect for a quick dinner!
Ingredients for 2 servings:
150 g fusilli
1 chicken breast fillet (approx. 200 g), cut into small cubes
1 small onion (approx. 80 g), cut into cubes
150 g broccoli florets
200 ml milk
400 ml vegetable stock
50 g grated cheddar
Some vegetable oil
1 tsp dried oregano
Salt and pepper to taste
Preparation:
1. Heat vegetable oil in a large saucepan and fry the chicken cubes in it until lightly browned.
2. Add onion and fry for 2 minutes.
3. Stir in fusilli, broccoli florets, milk, vegetable stock and oregano and mix well.
4. Cover the pot with a lid and simmer over medium heat for 12-15 minutes, stirring occasionally.
5. Stir in grated cheddar and season with salt and pepper. Serve immediately.
