❤ INGREDIENTS
2 boneless chicken breasts
3/4 jar DOÑA MARIA mole sauce
4 garlic cloves
1/2 tsp whole cumin
1/2 tsp peppercorns
3 cloves (forgot to mention on video)
1/2 tsp oregano
1 Tbsp chicken bouillon
1/2 medium onion (divided)
2 Roma tomatoes
small bunch cilantro
1 guajillo pepper
1 chile ancho
11/2 tsp salt
corn tortillas as needed
crema as needed
3/4 tablet Abuelita chocolate
8 oz. mozzarella block
queso fresco as needed
chopped onions as needed (optional)
7 cups water
● IN MOLCAJETE GRIND
1/2 tsp whole cumin
1/2 tsp peppercorns
2 garlic cloves

1/2 tsp salt (to help grind, optional)
grind well then add 1/3 cup water...set aside
●BROTH
2 chicken breasts
cilantro
1 tsp salt
2 garlic cloves
1/4 pice onion
7 cups water
(BOIL LOW FOR 35 MINUTES OR TILL
CHICKEN IS COOKED)...SET ASIDE.
●BOIL
1 guajillo chile
1 ancho chile
1 1/2 cups water
(BOIL LOW TILL CHILES ARE SOFT)...SET ASIDE
●CHOP BOTH CHICKEN BREASTS...SET ASIDE COVERED
!● GRATE MOZZARELLA CHEESE AND
CRUMBLE QUESO FRESCO...SET ASIDE
● fry tortillas in hot oil 1 at a time and fry to
soften, a few seconds on each side...set aside
● IN BLENDER
add 2 chiles with liquid
1/4 piece onion
2 garlic cloves
spices from molcajete
2 chopped tomatoes
3/4 jar mole sauce
1 Tbsp chicken bouillon
1 cup broth
1 tsp oregano
(BLEND WELL)
●IN DEEP POT
1 Tbsp oil
add mixture from blender
3/4 tablet Abuelita chocolate
bring up to low boil
add broth little at a time till perfect consistency to your liking, add salt or bouillon to your liking
lower heat to low/simmer- stirring non stop till chocolate Abuelita is totally dissolved, remove from heat after 15 minutes.
●PREPARE ENMOLADAS (mozzarella)
cover bottom of baking dish with mole sauce
dip 1 tortilla at a time in mole sauce (carefully)
put on plate and fill with chicken, onion, grated mozzarella and roll
set in a line in baking dish
pour mole sauce over ENMOLADAS
top with more cheese and put in pre heated oven 350° till cheese is melted...serve topped with crema.
● PREPARE ENMOLADAS (QUESO FRESCO)
add sauce on bottom of plate
dip tortilla 1 at a time in sauce
add chicken
add grated QUESO FRESCO
onions and roll, repeat process
set roll ups on plate top with chicken ,queso fresco, onions and crema...(no oven) ENJOY
