This dish is absolutely amazing. Quick, easy, delicious. You can have it on the table in no time at all. Check it out.
Mashed Potatoes
Wash and look over red potatoes. Small ones, cook whole, larger ones, cut in half. Boil in salted water until tender. Add butter, heavy cream, salt and pepper to taste. Mash until desired consistency.
Chicken Marsala
1/2 cup AP flour
1/2 tsp onion powder,
1/2 tsp garlic powder
salt & pepper to taste
2 Tbsp olive oil
1 Tbsp butter
1 cup sliced button mushrooms
1/2 - 1 cup heavy cream
Add oil and butter to pan. Get it hot. Add seasonings to flour, stir well. Dredge chicken lightly in flour. Set on plate. Add to fry pan. Cook 2-3 minutes on each side until golden brown. Remove to plate. Add more oil to pan if needed. Add mushrooms. Sautee 3-4 minutes. Add 1/4 to 1/2 cup wine. White or Marsala, your choice. Simmer until reduced by half. Add 1/2 - 1 cup heavy cream, let simmer a couple of minutes. Remove chicken to platter. Pour sauce over chicken.
Green Beans
Prepare whole green beans by snapping off ends.
Parboil 2-3 minutes. Remove to ice water bath to stop cooking. Dry to clean towel. Add to fry pan with a little bit of olive oil. Sautee until just getting a little bit of color. Add 1 tsp minced garlic. Continue to sautee for a couple of minutes. Put on a platter and finish with kosher or sea salt.
