Chili Cheese Fritos Salad Recipe
Ingredients:
2 cans whole kernel corn, drained
2 cups Mexican blend cheese
1 red bell pepper, chopped
1 can black beans, drained and rinsed
1 can chilies (mild or hot, depending on preference)
1/2 cup mayo
1 cup sour cream
1 tablespoon taco seasoning
1 tablespoon lime juice
1 tablespoon Tajín seasoning
1 bag Chili Cheese Fritos
Instructions:
Prepare the base ingredients:
In a large bowl, combine the drained whole kernel corn, chopped red bell pepper, black beans, and chilies.
Make the dressing:
In a separate smaller bowl, mix together the mayo, sour cream, taco seasoning, lime juice, and Tajín seasoning. Stir until well combined and smooth.
Combine:
Pour the dressing over the corn, bean, pepper, and chili mixture. Toss until all the ingredients are evenly coated with the creamy dressing.
Add the cheese:
Fold in the Mexican blend cheese, mixing gently to incorporate.
Crunch it up:
Just before serving, break up the Chili Cheese Fritos and fold them into the salad to add a nice crunch. You can also leave some Fritos aside to top the salad for extra crunch at serving time.
