EGG CHOWMEIN
Preparation time 10-15 minutes
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Boiling Noodles
3-4 liter Water, पानी
Salt to taste, नमक स्वादअनुसार
2-3 tbsp Oil, तेल
3 pkt. Noodles, नूडल्स
1 ½ tbsp Oil (after boiling noodles) तेल
For Chow Mein Mix
1 inch Ginger (peeled & finely chopped) अदरक
2 tsp Tender coriander stems, finely chopped, धनिया के डंठल
2 heaped tbsp Schezwan sauce, शेज़वान सॉस
2 tbsp Green chili sauce, ग्रीन चिली सॉस
½ cup Tomato ketchup, टोमेटो केचप
¼ cup Dark soy sauce, सोया सॉस
1 tsp Vinegar, सिरका
2 tbsp Red chili sauce (optional) रेड चिली सॉस
2 tbsp Oil, तेल
For Egg Mixture
5-6 no. Eggs, अंडा
Salt to taste, नमक स्वादअनुसार
1-2 tbsp Water, पानी
2 tbsp Oil, तेल
For Veg Chowmein
2 tbsp Oil, तेल
1 medium Onion, sliced, प्याज
2 large Carrots (peeled & cut into julienne) गाजर
1 medium Cabbage, cut into julienne, पत्ता गोभी
Salt to taste, नमक स्वादअनुसार
8-10 no. French beans, cut into diagonally, फ्रेंच बीन्स
1 large Yellow bell pepper, cut into julienne, पीली शिमला मिर्च
1 large Green capsicum, cut into julienne, हरी शिमला मिर्च
2-3 tbsp Prepared Chow Mein Sauce, तयार किया हुआ चाउमीन मिक्स
Boiled Noodles, उबले हुए नूडल्स
2 heaped tbsp Prepared Chow Mein Mix, तयार किया हुआ चाउमीन मिक्स
¼ cup Spring onion bulbs, cut into diagonally, हरी प्याज
For Garnish
Spring onion, हरी प्याज
For Egg Chowmein (type 1)
Prepared egg omelet, cut into strips, तयार किया हुआ अंडे का ऑमलेट
Prepared veg chow mein, तयार किया हुआ वेज चाउमीन
For Garnish
Spring onion, हरी प्याज
For Egg Chow mein (type 2)
1 tbsp Oil, तेल
½ medium Onion, sliced, प्याज
2 tbsp Prepared Chow Mein Mix, तयार किया हुआ चाउमीन मिक्स
2-3 tbsp Water, पानी
Prepared egg omelet, cut into strips, तयार किया हुआ अंडे का ऑमलेट
few Spring onion, roughly chopped, हरी प्याज
Prepared veg chow mein, तयार किया हुआ वेज चाउमीन
For Garnish
Spring onion, हरी प्याज
Process
For Boiling Noodles
In a sauce pot, add water, salt to taste, oil and get it to roaring boiled.
Add noodles and cook it for 7-8 minutes or until it's 70-80% cooked.
Strain the noodles, sprinkle some oil and transfer it to a tray.
Keep it aside to cool down at room temperature.
Keep it aside for further use.
For Chow mein Sauce
In a bowl, add ginger, tender coriander stems, schezwan sauce, green chili sauce, tomato ketchup, dark soy sauce, vinegar, red chili sauce, oil and give it a good mix.
Transfer it to an airtight container and keep it aside for further use.
For Egg Mixture
In a bowl, add eggs, salt to taste, water, oil and whisk it well.
Heat a nonstick pan, pour ladleful prepared egg mixture and cook it for 2-3 minutes on both the sides.
Transfer it to a chopping board and roll it.
Cut it into thin strips and keep it aside for further use.
For Veg Chowmein
In a wok, add oil, once it's smoky hot, add onions, carrots and toss it for a minute.
Add cabbage, salt to taste, french beans, yellow bell pepper, green capsicum and toss it well on high flames.
Add prepared chow mein sauce, boiled noodles and mix it gently.
Finish it with prepared chow mein sauce, spring onion bulbs and toss it for a minute.
Transfer it to a serving bowl and garnish it with spring onion.
Serve hot.
For Egg Chow mein (type 1)
In a wok or pan, add prepared omelet strips, veg chow mein and toss it on high flame for a minute.
Transfer it into the serving bowl and garnish it with spring onion.
Serve hot.
For Egg Chow mein (type 2)
In a wok or pan, add oil, once it's hot, add onion, prepared chow mein sauce and saute it for a minute.
Add water, prepare omelet strips and toss it well.
Pour the prepared sauce onto the veg chowmein and garnish it with spring onion.
Serve hot.
