Chocolate Chip Banana Muffins
Ingredients:
- 3 Large eggs
- 215g Vegetable or Coconut Oil
- 200g Sugar
- 160g Dark brown sugar
- 575g Mashed Ripe Bananas
- 30g Water
- 10g Soy Sauce
- 9g Vanilla paste
- 570g All Purpose Flour
- 4g Baking Powder
- 7g Baking Soda
- 2.6g Ground Cinnamon
- 1g Ground Nutmeg (Fresh ground is best)
- 300g Chocolate Chips
Directions:
1. Preheat oven to 350F/175C
2. Prep your muffin tin.
3. In a bowl whisk together Flour, Baking Powder, Baking Soda, Ground Cinnamon and Nutmeg
4. In a second bowl lightly beat your eggs add the oil and whisk together together
5. Add sugar and brown sugar to the egg mixture, using a spatula mix them together. (Make sure there is no lumps)
6. Add water, Soy Sauce and Vanilla to the mixture and stir
7. Once everything is mixed, add the flour mixture to the bowl
8. Stir slowly until there is no dry flour left. Be careful not to over mix
9. Add the Chocolate chips and stir them through the batter
10. Using a scoop or spoon, add mixture to your muffin liners, I use a large scoop and do 1 ½ scoops per liner
11. Bake in over for 25 minutes, turning pan after 10 minutes
12. Cool and enjoy
Notes:
- If baking at high altitude add 60g extra flour
- For pan prep, I use muffin liners but you can using baking spray or just grease the pan
- If you do not consume soy sauce you can sub in 1tsp salt
