STICKY TOFFEE PUDDING
I based it on this recipe (it really is the best you can find online),

however I did do a few changes to suit my taste:
- Reduced sugar SIGNIFICANTLY. Instead of 150g of sugar for the cake part I added only 90g, and added 125g of dates instead of 150g as well.
- For the caramel, I added 85g of butter and 65g of sugar (and 100 ml of cream)
- This dessert is very rich with other sweeteners - dates, treacle, syrup, so I’d say reducing sugar is a must. If you don’t want to reduce sugar as significantly as I did, try 100g for sponge & 100g for caramel instead. Even with all reductions I did, this dessert turned out very sweet.
- I cooked dates with a little knob of grated fresh ginger for extra scrumptiousness.
- I also used vegan butter as my husband can’t have lactose. It worked well.
- I didn’t have self raising flour, so I used regular white flour + teaspoon of baking powder.
- Substituted golden syrup with maple syrup. I know, not traditional at all, but I like maple syrup more & it's easier to access worldwide. You can also substitute it with honey.
- Black treacle is a must and that’s what gives this pudding its deep flavour. However, if you can’t find treacle (or dark molasses), use very very dark brown sugar instead - the darkest you can find. For 1 tbsp of treacle use 2 tbsp of dark brown sugar.
