A New Year's Day tradition in my house. If you're not eating them all at once, keep them un-frosted, warm them up individually, then frost.
Ingredients:
Dough:
1 cup milk
3 tablespoons unsalted butter
3 1/2 cups (440g) (or more) all purpose flour
1/2 cup sugar (100g)
1 large egg
2 1/4 teaspoons rapid-rise yeast (or 2 envelopes)
1 teaspoon salt
1/2 cup heavy cream (to pour over the risen rolls)
Filling:
3/4 cup (packed) golden brown sugar (150g)
1 1/2 tablespoons ground cinnamon
½ tsp ground cardamom
1/4 cup (1/2 stick) unsalted butter
Frosting:
4 ounces cream cheese
3/4 cup powdered sugar (75g)
1/4 cup (1/2 stick) unsalted butter
1 teaspoon vanilla extract
Directions:
Combine sugar, egg, yeast, and salt. Heat milk & butter until 120F-130F (48C-54C). Add into sugar mixture and combine. Add flour in parts until all incorporated, adding additional flour about 1 tablespoon at a time if dough is overly sticky (don't over-add flour, kneading will help). Knead on a floured work surface until smooth, elastic, and no longer sticky (6-8 mins). Place dough ball into a lightly oiled boil, cover, and let rise about 2 hours (or overnight in the fridge). Make the frosting by whipping together the ingredients. Roll dough out on a floured work surface to roughly 11x15 in. Spread softened butter over the dough. Make the filling by combining the brown sugar, cinnamon, and cardamom and spread over the buttered dough. Roll the dough, pinching together the seam. Cut into pieces about 3/4 - 1 inch wide (for 10-12 large rolls). Place rolls into greased baking dish (have them almost touching in a smaller dish for "taller" rolls or slightly more spread out like I have them here for more "spread-out" rolls with more browning on top). Cover and let rise 30-45 mins (depending how warm your kitchen is). Bake at 375F (190C) for around 20 minutes or until the tops are golden brown. Remove from oven and immediately remove rolls from pan onto cooling rack. Let cool 5 minutes then frost while warm (do not frost rolls cool - warm them up in the microwave, if necessary).
