Ingredients
- 500g (1 lb) sausage meat (or uncased sausages)
- 1 medium onion, finely chopped
- 2 celery stalks, finely chopped
- 2 garlic cloves, minced
- 200g (4 cups) cubed or breadcrumbs (preferably stale)
- 1- 2 apples, peeled, cored, and diced (optional for sweetness)
- 1 tbsp fresh sage, finely chopped (or 1 tsp dried sage)
- 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

- 60g (1/4 cup) butter
- 250ml (1 cup) chicken or vegetable stock use as required
- 1 egg, beaten
- Salt and black pepper, to taste
- Fresh parsley, finely chopped (for garnish)
Preheat your oven to 180°C (350°F)
Cover with foil. Bake for 25 minutes.
Remove the foil and bake for 15-20 minutes until the top is golden and slightly crispy.
