This creamy coconut chicken curry uses pantry staples , is so comforting, delicious and easy to make on any day of the week. In just a few steps you end up with this mind blowing dish , full of rich flavors and textures. The flour helps the chicken to stay moist and color ( for gluten free use rice flour and tamari or just omit the flour and soy sauce )
INGREDIENTS
2lb Chicken drumsticks, skinless
1cup all purpose flour
1/2 tsp cumin coriander powder
1/2 tsp garlic powder
1tsp onion powder
1/2 tsp ginger powder
Salt and pepper
To sear/ brown the chicken
1tbs Avocado oil
1tbs butter
Coated/ dredged chicken, sear , remove to a plate
For the sauce
4 green onions, chopped, whites and greens separated
1tbs garlic ginger paste ( 1tsp of each )
1/4 cup ketchup
1 tsp chili paste/ sauce
1 can coconut milk
1 tsp corn starch
1 tbs soy sauce
1 tsp turmeric
1/2 tsp cumin coriander powder
1 tsp apple cider vinegar or lime juice
For the Vegetables
1 tbs avocado oil
4-6 medium tri color carrots or just regular carrots
1 Yellow bell pepper
1 Comb fresh corn, cut or 2 cups frozen
