Coconut Icebox Cake -- Holiday Food Series -- Moist and Delicious Coconut Cake
Marie made this cake in Dec 2020. This cake is the most delicious coconut cake that Marie has ever made. We wanted to share this recipe with you again in our new series "Holiday Food Series".

Coconut Icebox Cake
Ingredients:
1 Box of white cake mix
1 can of cream of coconut (15 oz.)
1 can of Eagle Brand condensed milk
Cool whip (8oz.)
Coconut Flakes, I used 12 oz. of frozen coconut but you can use any kind
2 tsp vanilla flavoring
Directions:
Mix the cake as directed on the cake box, add 2 tsp of vanilla flavoring
Bake in a 9 X 13 pan according to directions on the box
Allow cake to cool completely and poke holes all over the cake
Pour the cream of coconut over the cake
Pour the Eagle Brand milk over the cake
Refrigerate over night or for several hours before topping
Spread the cool whip over the cake
Sprinkle the coconut over the cake
We kept ours in the refrigerator until ready to serve
Serve and Enjoy !!!
