Ingredients 材料:
40g Egg White (蛋白)
35g Caster Sugar (细砂糖)
60g Icing sugar (糖粉)
65g Almond meal (杏仁粉)
1/4 tsp coffee emulco (咖啡香精)
【Filling 馅料】
50g sugar (砂糖)
50g whipping cream (动物性鲜奶油)
1 tsp instant coffee powder (即溶咖啡粉)
120g butter(牛油)
** Separate the eggs, place the egg whites in a clean container and let them hang out in the fridge for 3 days before using. This will dehydrate them and make them perfect for macarons.
