Cranberry Apple Pear Relish
3C Cranberry, Fresh or Frozen (12 OZ Bag)
3 Apples, peeled, cored & diced
2 Pears, peeled, cored & forced
1 1/2 C Golden Raisins
2C Sugar
1C Orange Juice
2T Orange Zest, grated (or 2 Tsp dehydrate orange zest powder)
2tsp Cinnamon, ground
1/4Tsp Nutmeg, ground
1/2C Orange Liqueur
Combine cranberries, apples, pears, raisins, sugar, orange juice, orange zest, cinnamon and nutmeg in a very large saucepan, Bring to a boil over high heat, stirring frequently. Reduce heat and boil gently, uncovered for about 25 minutes or until mixture thickens, site occasionally. remove from heat and stir in liqueur.
Ladle hot relish into hot jars and fill within 1/2 inch of rim. Process 15 minutes for half pints and process 20 for pints. Let canner cool 5 minutes and pull jars from canner and place on a towel on the counter and let rest 24 hours before taking rings off. Wash jars and make sure you have a good seal. Then store in a cool dark and dry place.
