Cranberry Juice The Safe Way (a canning recipe)

Great deals on whole cranberries after Thanksgiving? Don't just put whole cranberries, sugar and water in a jar and water bath can it. That's not safe. Find out why. Cranberry Juice Equal parts cranberries and water by volume (I did 2 lbs cranberries = 9 cups cranberries + 9 cups water. Cook in a large pot until cranberries split, about 10 minutes. If you still have a lot of whole cranberries, crush them with a masher or lightly blend them with an immersion blender. Strain hot cranberries and juice through a fine sieve. (You can use the leftover pulp for other uses). Heat resulting juice to 190 degrees F for 5 minutes. Sweeten to taste (I added 1/2 cup sugar to 8 cups juice). Place juice in quart jars with 1/4" head space. Process in boiling water bath canner for 15 minutes.
