Hi folks welcome to my daily vlog and today I am showing you how I make cream slices in the bakery 1st we start off with puff pastry the size of a pastry wants to be 58 cm by 38 cm, now if it's frozen you need to let it defrost, then what we to need do is dot the top of the pastry all way through, so its not going to lift in the oven, you now need to rest that for around :20 minutes then we're put the pastry into the oven for around about 15 minutes the temperature is about 220 Celsius, now baked cool down for at least 60 minutes, now placed onto the table and cut into to 1/2 is the bottom which you need to cover with jam, the other 1/2 is the top, now for making a cream you need a bowl and 1 litre of boxed cream put into machine bowl and give it a good whisk on 3rd speed for about 3 minutes, now your cream is ready we can now add over the top of the jam, Now pop the other place of pastry over the top of the cream and we can now cover with bakers fondant this Water, granulated sugar, And glucose syrup, The recipe is in the link below, now the fondant has set we can now cut up into 20 pieces or whatever you want it's a very easy recipe, now for the home bakers recipe it's below in the description, How to make Puff Pastry video recipe Link : https://youtu.be/7XrecSXUcOU

Recipe Ingredients:
2 sheets frozen puff pastry 39cm x 29cm
Method
Pre-heat the oven to 220C/425F/Gas 7. Line two baking trays with baking parchment.
Divide the pastry into two equal pieces both pieces to be 38cm x 29cm 3mm Then place each pastry sheet onto the lined baking trays, and rest for 10-15 minutes.
Bake the pastry sheets for 10-15 minutes or until golden-brown and crisp. Set aside to cool.
Place one pastry sheet in bottom of the lined baking tray. (Reserve the best piece for the top.)

Spread the Custard evenly onto the pastry in the baking tray before placing other piece of pastry, on top. Refrigerate while getting the fondant ready.

Warm up your fondant not red hot temperature, best to warm up in a double jacket bowl on hob
Take the custard slice from the fridge and spread the fondant icing over the top layer of pastry.
Place the slice back into the fridge to set.
Cut the finished vanilla slice into 16 pieces.
Tip: if you don’t have fondant 600g /21oz icing sugar 15 tsp water, for the icing, sift the icing sugar into a bowl. Stir in cold water until thoroughly combined and set aside.
