Need to get dinner on the table pronto? Whip up this Creamy Chipotle Pasta. It is super delicious with a little spicy kick. Think of it as your starting point, because you can make it with chicken, or make it with meatballs like I did. Read on for the recipe.

Creamy Chipotle Pasta
1 lb. pasta of your choice
4 oz. (1/2 a brick) of cream cheese, softened
2-3 chipotle peppers in adobo sauce
1 3/4 cup heavy whipping cream
1 3/4 cup water
2 tsp. chicken bouillon
salt to taste (approx. 1/2 tsp.)
grated parmesan cheese (optional and to taste)
If you're making this pasta with a protein, cook that first.
Fill large pot with water and bring to a boil on stovetop. Add in pasta and let it cook until al dente.
While pasta is cooking, place cream cheese, chipotle peppers, heavy cream, water, chicken bouillon and salt in blender or food processor and purée until you are left with a smooth sauce. (Because chipotle peppers can be spicy, I recommend removing the seeds and starting with just two. Taste the sauce and decide if you'd like to add more heat. You can also add more of the adobo sauce, particularly to add a little color to your sauce.)
Drain pasta and return to saucepan or pot on stovetop. Include cooked protein, as well. Pour chipotle sauce over pasta (and protein) and cook until sauce is hot. Add grated parmesan cheese, stir until fully combined and enjoy while it's hot.
