Creamy Make-Ahead Mashed Potatoes
10 large potatoes, peeled & quartered
1 c (8 oz) sour cream
1 pkg (8 oz) cream cheese, softened
6 tbsp butter, divided
2 tbsp dried minced onion
1 tsp salt
Paprika (optional)
Place potatoes in a Dutch oven or large kettle. Cover with water, and bring to a boil. Reduce heat, cover, and cook for 20 to 25 minutes or until the potatoes are tender. Drain and place in a bowl, and mash. Add sour cream, cream cheese, 4 tablespoons of butter, onion, and salt. Stir until smooth, and the cream cheese and butter are melted. Spread in a greased 9x13-inch baking dish. Melt the remaining butter, and drizzle it over the potatoes. Sprinkle with Paprika. Refrigerate, or bake, covered, at 350°F for 15 minutes, or until warm. If the potatoes are made-ahead and refrigerated, then let them stand at room temperature for half an hour before baking. This Yields about 12 servings.
