Ingredients:
Oil 1 tbsp
Onion chopped ½ cup
Ginger chopped 1 tsp
Green chilli chopped 1 tsp
French beans chopped ½ cup
Capsicum chopped ½ cup
Carrot chopped ½ cup
Salt 1 tbsp
Oregano 1 tsp
Chilli flakes 1 tsp
Paneer 2 cups
Cheese ½ cup
Refined flour 2 tsp
Cornflour 2 tsp
Chaat masala 1 tsp
Coriander chopped 2 tbsp
Refined flour ¼ cup
Water as required
Bread crumbs 1½ cup
Method:
To prepare delicious paneer cutlets, follow these steps:
1. Heat the Pan: Begin by heating a pan over medium heat. Add a generous amount of cooking oil to the pan, ensuring it's hot and ready for sautéing.
2. Sauté Aromatics: Add finely chopped onions, ginger, and green chilli to the hot oil. Sauté them until the onions turn translucent, releasing their delightful fragrance.
3. Add Veggies: Incorporate the star ingredients - chopped French beans, capsicum, and carrots. Continue to sauté this colourful medley of vegetables. The sizzling sound and the aroma will make your kitchen come alive.
4. Season to Perfection: As the vegetables cook, it's time to season your mixture. Sprinkle a pinch of salt, oregano, and chilli flakes, enhancing the flavours and giving your cutlets that irresistible zing.
5. Transfer and Cool: Once the vegetables have softened and taken on those delicious flavours, transfer the mixture to a separate bowl. Let it cool for a few minutes.
6. Combine Ingredients: In another bowl, take some fresh, crumbled paneer and mix it with shredded cheese. Add the cooled sautéed vegetables to this mixture.
7. Bind with Flour: To hold everything together, add refined flour and cornflour to the mixture. Don't forget to introduce some chaat masala and freshly chopped coriander, which will give your cutlets a unique twist.
8. Shape the Cutlets: Take a portion of this mixture and shape it into tikki or cutlet forms. The size is up to you, but they should be uniform for even frying.
9. Prepare Slurry: In a separate bowl, create a slurry by mixing refined flour with water. This slurry will serve as the adhesive for the next step.
10. Coat with Bread Crumbs: Dip each cutlet into the slurry, ensuring it's well-coated. Afterward, transfer it to a plate filled with breadcrumbs. Coat each cutlet thoroughly in breadcrumbs, creating a crispy outer layer.
11. Heat the Oil: In a deep frying pan, heat a generous amount of oil. It should be hot but not smoking. Test it by dropping a breadcrumb; if it sizzles, it's ready.
