Today, I made a chocolate cake using cherries.
I see a lot of cherries in the supermarket these days
Cherries are so delicious.
It catches my eye with its bright red color.
I have no choice but to make a cherry cake.
Forêt Noire, also known as BLACK FOREST, is a very attractive cake.
It's a chocolate sponge cake with whipped cream and cherries layer by layer, and chocolate crumbs on the top.
After adding cherry liqueur made of cherry liqueur and pickled cherries, decorate the top of the cake with cream and cherries.
Forêt noire is the French name for Schwarzwälder Kirschtorte, the first chocolate cake made in Germany.
It means 'black forest', so it is called black forest cake in the US and black forest gâteau in the UK.
And this time, I made a little cherry syrup using Kirsch.
The fragrant and tangy scent is so attractive.
We have a small child in our house, so we boiled it a little more to get rid of the alcohol and just fill it with flavor.
If you add it to cherry compote and cherry syrup, it will give you a really luxurious taste.
They say that a drop of liqueur can change the quality of a cake?

(Chocolate is minced, flour is before sieving)
● Cake finished size ( 18cm*6cm )

♥Dark Chocolate Ganache Cream
190 g dark chocolate ( 1 cup + 3 Tbsp )
100g whipped cream (A) ( 1/3 cup + 1 Tbsp +1 tsp )
15g starch syrup ( 2 tsp )
5g unsalted butter ( 1 tsp )
310g whipped cream (B) ( 1 cup + 1/3 cup )
● Chocolate Sponge Cake
( Mold 18cm )
2 eggs
50g (1/4 cup) sugar
10g honey ( 1/2 Tbsp )
a pinch of salt
3ml vanilla extract
45g cake flour ( 1/4 cup + 1 Tbsp )
1/4 tsp baking powder
15 g cocoa powder ( 2 Tbsp + 1 tsp )
23g milk ( 1 Tbsp + 1 tsp )
20g unsalted butter ( 1 Tbsp+ 1 tsp )
●Cherry compote
300g cherries (with seeds) (30-35 pcs.)
60g sugar ( 1/4 cup + 1 Tbsp )
Lemon juice 15g~20g ( 1 Tbsp )
15g Kirsch ( 1 Tbsp )
12 g cornstarch ( 2 Tbsp )
35g water ( 1 Tbsp + 1 tsp )

100g heavy cream ( 1/3 cup + 1 Tbsp +1 tsp )
10 g sugar ( 1 Tbsp )
About 50g Chocolate Sprinkles ( 1/3 cup )
