DALCA - CHEF DAVE #chefdaveveganjourney #inspirasiramadan #resipiramadan #ramadan2023 #kisahalong #puasa2023 #bukapuasa #ramadankampung #veganfood #veganrecipe #resipivegan #veganstyle #malaysianchef #veganchef #MakanLokal #MYFoodie Masa penyediaan : 2-3 jam Masa memasak : 30 minit Hidangan :5-6 pax Resipi Bahan A: 1 ½ cawan Kacang dhal (rendam 2-3jam) ½ sudu kecil serbuk kunyit ½ sudu kecil garam 2 sudu besar serbuk kari Secubit jintan putih 2 biji bawang kecil(dihiris) 2-3 ulas bawang putih(dihiris) 1 cili hijau(potong dua) Sedikit minyak Air secukupnya Bahan sayur : 1 Terung bulat (potong wedges) 1 lobak merah(potong wedges) 1 biji kentang(potong kiub) 1 biji tomato (belah 4/6) 3-4 batang kacang Panjang (potong kecil) Sedikit bunga kobis Sedikit batang cendawan shitake Bahan B: Minyak sapi vegan 4 sekawan 4 cili kering 1 biji bawang merah(dihiris) Daun kari Sedikit halia(ditumbuk) 2 ulas bawang putih(ditumbuk) Sedikit daun ketumbar(dihiris) Cara memasak : 1 Sediakan periuk, masukkan kesemua bahan A. Biarkan ia reneh sehingga kacang dhal masak. 2 Bila kacang dhal mula empuk, masukkan bahan sayur yang ambil masa nak empuk seperti, terung bulat, lobak merah dan kentang. Boleh tambah air jika perlu. Biarkan ia reneh lagi. Lepastu tutup api seketika. 3 Ambil kuali, tumiskan kesemua bahan B dengan menggunakan minyak sapi vegan. Tumis sehingga naik bau wangi. 4 Kemudian masukkan bahan tumisan B pada kuah dalca tadi dan batang cendawan shitake. 5 Buka api semula kuah dalca, kacau sebati. kemudian masukkan kesemua bahan sayur seperti, bunga kobis, kacang panjang, tomato dan daun ketumbar. Kacau sebati dan biarkan ia reneh. 6 Masukkan garam dan adjust rasa. Sedia untuk dihidang. Preparation time: 2-3 hours Cooking time: 30 minutes Servings: 5-6 pax Recipe Ingredients A: 1 ½ cups autralia dhall (soak 2-3 hours) ½ tsp turmeric powder ½ tsp salt 2 tbsp curry powder A pinch cumin seed 2 small onions (sliced) 2-3 cloves garlic (sliced) 1 green chili (cut in half) A little oil Water as needed Vegetable ingredients: 1 round brinjal (cut into wedges) 1 carrot (cut into wedges) 1 potato (cut into cubes) 1 tomato (cut into 4/6) 3-4 long beans (cut into small pieces) A little cauliflower A few shitake mushroom stick Ingredients B: Vegan ghee 4 dry spices 4 dried chilies 1 onion (sliced) Curry leaves A little ginger (Mashed) 2 cloves garlic (Mashed) A few coriander leaves (sliced) Cooking method : 1 Prepare a pot, add all ingredients A. Let it simmer until the australia dhal are cooked. 2 When the australia dhal start to soften, add vegetable ingredients that take time to soften such as round brinjal, carrots and potatoes. Can add water if necessary. Let it simmer again. Then turn off the heat for a while. 3 Take a pan, sauté all ingredients B using vegan ghee. Sauté until aromatic. 4 Then add stir-fried ingredient B to the dalca and shitake mushroom sticks. 5 Turn on the fire again for the dalca, stir well. Then add all the vegetable ingredients such as cauliflower, long beans, tomatoes and coriander leaves. Stir well and let it simmer. 6 Add salt and adjust the taste. Ready to be served
