Delicious Summery Tomato and Basil Tart

The perfect summer lunch or brunch dish straight from our garden. For the crust: - 1 & ½ cups of all-purpose flour - 4 tablespoons butter - ½ cup olive oil - ½ teaspoon salt - ¼ cup cold water For the filling: - 2 cups of baby tomatoes halved - 1 teaspoon salt - ½ cup crumbled goat cheese - 3 tablespoons olive oil - 1 cup basil leaves Preparation: Preheat the oven to 350 degrees F Make the crust: In the bowl of a standing mixer, fitted with a paddle attachment, place flour and cold butter salt and oil. On medium speed mix until small crumbs form. Gradually add the water little at a time until a soft dough forms. Place the dough into the refrigerator for 30 minutes. Cut the tomatoes in half. Remove the dough from the refrigerator, roll it out to about 1/4 inch thickness. Place into a tart pan. Fill the center with tomatoes top with the goat cheese salt, sprinkle with olive oil and top with basil leaves. Bake for 30-35 minutes until crust is golden brown. Serve at room temperature.
