Delicious Veggie Pot Pie
This pot pie is a delicious favourite! It is warm, comforting, creamy and absolutely yummy! You can add and subtract ingredients to this pot pie too! You might be tempted to make more and stock up your freezer. Let me know how you like to make your pie?
Ingredients:
1 package (397 g) puff pastry, defrosted or pie crust
2 Tbsp vegetable oil (separated into 1 Tbsp portions)
2 medium potatoes, peeled
1 medium onion, chopped
3 medium carrots, peeled
2 small ribs of celery, chopped
1 cup frozen peas
¼ cup vegan butter
½ cup flour
2 cups vegetable broth
1 ½ cups soy milk
¼ Tsp salt
⅛ Tsp pepper
2 Tsp fresh thyme
Optional:
1 package vegan chick’n/seitan, tofu or a can of beans
Instructions:
Peel and chop potato. Add to a pot of boiling water and cook for 5-8 minutes. Drain water and set aside in a bowl.
Prepare onion by chopping into small pieces. Peel and chop carrots into small cubes. Chop celery into small pieces as well. Place vegetables together into a separate bowl.
Prepare the thyme by stripping leaves off the stem and set aside.
In a pan, heat 1 tbsp of vegetable oil and brown vegan chick'n/seitan. Remove seitan, set aside and when cooled chop into smaller bite-sized pieces.
In the same pan, heat 1 tbsp of vegetable oil. Saute the vegetables until softened.
Add the chopped chick’n into small pieces and add to vegetables.
To the bowl of vegetables, also add potatoes and frozen peas.
In a separate pan, melt vegan butter. Add flour and cook for a couple of minutes making a roux. Slowly add the vegetable broth a little at a time, whisking the liquid into the roux until all the broth is used. Next whisk sauce until smooth and continue to add the soy milk, a little at a time, until all the soy milk is incorporated. The sauce should have a nice even consistency. Add salt and pepper to taste and stir in. Next add the thyme and stir it into the sauce.
Add the sauce to the vegetable mixture. Mix so that the sauce coats the mixture thoroughly. Pour contents into a 13”x 9” baking dish and set aside..
Turn on the oven to 375°F.
Roll out puff pastry dough on a floured surface, large enough to cover the top of the pan. Make slits in the dough to allow the heat to escape.
Bake for 25-30 minutes.
Remove from oven and allow it to cool for 5 minutes.
Suggestion: Other vegetables can be added as well such as green beans, etc. You can also trim the pastry to fit the pan better if you so choose.
