Derby Breakfast Yeast Rolls - Perfect for Breakfast, Brunch, Showers, and of course, Derby Parties!
Derby Breakfast Yeast Rolls
1 packet of active dry yeast (about 2 1/4 teaspoons)
1 cup warm buttermilk (105°- 110°)
1/2 teaspoon baking soda
1 teaspoon salt
2 Tablespoons sugar
2 1/2 cups all-purpose flour
1/2 cup butter, melted
Dissolve yeast in the warm buttermilk; set aside for 10 minutes. Sift together the soda, salt, sugar, and flour in a large mixing bowl. Stir the two mixtures together until a dough is formed.
Move to a lightly floured work surface. Roll out 1/2 inch thick. Cut out with a small 2-inch biscuit cutter. Place rolls almost touching in a greased or parchment paper lined pan. Brush tops with melted butter. Allow to rise in a warm place for one hour.
Bake at 400° for 12 minutes. Watch closely.
