Kopai Saigo Flavor
Ingredients
• 4 cups of all purpose flour
• 1/4 cup of white sugar
• 1 cup of saigo
• 6 cups of hot water
• 2 1/2 cups of tap water
Carmel Sauce
• 1 can of evaporated milk
• 1 cup of hot water
• 1 cup of brown or raw sugar
Steps.
1. Make the dumplings dough by mixing sugar with flour then add 1 1/2 cups of water
2. Mix until it evokes a smooth dough
3. Add hot water to the pot and bring to boil
4. Start adding dough balls into the pit once the water boils
5. Soften the saigo or tapioca pearls by adding the last cup of tap water
6. Use spoon to scoop dough into the pot or you can use your hands to form small bite size dough balls
7. Continue with the process until the dough is used up and keep stirring at the same time
8. Add saigo and let it cook and keep stirring until it turns clear
9. Make caramel sauce by adding sugar to frying pan
10. Let the sugar dissolve on medium heat and keep stirring until you get a nice caramel colour
11. Make sure the sugar doesn’t burn by stirring constantly
12. Add 1 cup of hot water slowly and carefully stir to mix
13. Once the sugar is fully dissolved, turn the oven off and add the can of evaporated milk
14. Add the caramel mix and stir to combine.
