Today's drink is Doctor Funk! Believe it or not, this is the only classic tiki cocktail that originated in the South Pacific (which is where tiki bars pretended to be). Doctor Bernhard Funk created this drink with absinthe, lime juice, seltzer, and occasionally grenadine. Rum was an addition that came decades later. This recipe is full-flavored with bold rum and assertive absinthe while maintaining a refreshing brightness. Hope you enjoy it. Cheers!

THE DOCTOR FUNK RECIPE 5:35
3/4 oz (22.5 ml) Hamilton Jamaican Pot Still Black Rum
3/4 oz (22.5 ml) Holmes Cay Fiji Single Origin Edition Rum
1/4 oz (7.5 ml) St. George Absinthe Verte
1/2 oz (15 ml) fresh lemon juice
1/2 oz (15 ml) fresh lime juice
3/4 oz (22.5 ml) Portland Syrups x Anders Erickson Grenadine (or my DIY recipe*)
1 oz (30 ml) Topo Chico Sparkling Mineral Water (or any bubbly water)
*Homemade Pomegranate Grenadine
- 450g granulated sugar
- 300g 100% pomegranate juice
- 20g pomegranate molasses
- 5ml (~2g) rose water
In a medium sauce pan, combine sugar, pomegranate juice, and pomegranate molasses. Stir over heat until sugar is completely dissolved. Remove from heat and add rose water. Stir to combine.
