COOKIES
18 ounce boxed chocolate cake mix
2 eggs, lightly beaten
1/2 cup oil
1 Tablespoon vanilla
Preheat oven to 375.
Mix together the cake mix, eggs, oil, and vanilla in a large bowl. Use a cookie scoop to scoop the dough so that all the cookies will be the exact same size. Place cookie dough 2 inches apart on parchment paper lined cookie sheets. Bake for 8 to 9 minutes until done, or just until the tops begin to crack and look dry. Immediately slide the parchment paper and cookies off the cookie sheet and cool completely.
Place a large scoop of the filling (recipe below) on the bottom of one baked cookie and top with another cookie, making a “sandwich.” Cover and refrigerate until eaten. 
FILLING:
8 ounces cream cheese, room temperature
1/4 cup butter, room temperature
2 teaspoons milk
1 teaspoon vanilla
4-5 cups powdered sugar
In a large mixing bowl, beat together the cream cheese and butter until well combined. Add in 4 cups of the powdered sugar, one cup at a time, scraping sides and mixing well with each addition. Blend in the milk and vanilla. Beat well. Use the fifth cup of powdered sugar if needed to make a stiff filling.
Notes:
*Use any flavor of cake mix in place of the chocolate cake mix, if desired. 
*In the video, Tom spooned the filling onto the cookies. That’s a very easy and simple way to create the cookie sandwiches. For the photograph on the thumbnail of the video, Tom placed the filling in a piping bag and piped onto the cookies. This will make a smoother look to your filling and a nicer presentation.
