DUDHI NA MUTHIYA CHEF AANAL KOTAK PREP TIME: 10 minutes COOKING TIME: 20 minutes INGREDIENTS: FOR MUTHIA: • ½ Cup Coarse Wheat Flour • 2 Tbsp Oil • 1 Cup Wheat Flour • 2 Cup Guard/Dudhi (grated) • ½ Cup Methi leaves (chopped) • 2 no Green chilli (chopped) • 1/2 Tbsp Ginger Garlic Paste • 1 Tbsp White Sesame Seeds • 1 Tsp Carom Seeds • Salt to taste • 1 Tbsp Coriander Powder • 1 Tbsp Cumin Powder • 1 Tsp Turmeric Powder • 1 Tsp Red Chilli Powder • 2 Tbsp Jaggery • 2 Tbsp Oil • Pinch of baking soda • 2 Tbsp Oil FOR TADKA: • 3 Tbsp Oil • 1 Tbsp Mustard Seed • 1 Tsp Cumin Seed • 1 Tsp Asafoetida • 1 Tbsp White Sesame Seed • 10-12 Nos Curry Leaves • ½ Nos Lemon Juice METHOD: FOR MUTHIA: • Take a dudhi and peel and grate the dudhi. • In a bowl add coarse wheat flour, and oil and mix it properly. • Then add wheat flour, grated dudhi, methi leaves, green chilli, ginger garlic paste, white sesame seed, carom seed, salt, coriander powder, cumin powder, turmeric powder, red chilli powder, jaggery, oil, baking soda and mix it well properly and make a semi-soft dough. • Then add some oil and knead the dough. • Further, in a steamer, steam the steamer for 5 minutes, and grease the plate and your hands with oil. • Take a small portion of dough and shape each portion into a cylindrical roll with your hand and make muthia shape. • Place the muthia on a plate and steam this muthiya for 10-15 minutes on medium flame. • As muthiya gets cooked cool it down properly and then cut it into pieces. FOR TADKA: • Take a pan add oil, mustard seeds, cumin seeds, asafoetida, white sesame seeds, curry leaves, and then add the steamed muthiya and mix it well. • At last add some lemon juice and mix it well. • Serve hot dudhi na muthiya and enjoy it!!
