300-325g pureed durian meat with 40ml milk (if using fresh durian, not wet like frozen durian, you should increase the amount of milk to 80ml)
2 egg yolks
2-3 tbsp sugar (30-45g) Depending on your durian sweetness
7-9g Gelatin soaked in water with a ratio of 1:5 (ie 35-45 water). Heat in water bath or microwave for 20 seconds
350g whipping cream whipped with 20g sugar
Ingredients for durian shell-shaped butter cream:
150g whipped cream with 1 tbsp sugar (in clip P use 5g Multibase additive, optional)
150g room temperature soft butter
65g powdered sugar
75g durian
Beat the sugar with the soft butter until the sugar dissolves and the butter turns light yellow. Then add durian and mix well. Mix with the whipped whipping cream.
