Arbi ki latpati sabzi
Ingredients
Mustard oil 1 tbsp
Ajwain 1 tsp
Hing ½ tsp
Arbi boiled & peeled 2 cups
Ginger chopped ½ tbsp
Green chilli chopped 1 tsp
Garlic chopped 2 tbsp
Water as required
Besan 2 tbsp
Salt ½ tbsp
Red chilli powder ½ tbsp
Turmeric powder 1 tsp
Chopped coriander 1 tbsp
Method
Heat a pan, add mustard oil, ajwain, hing and let it bloom.
Then add chopped ginger, chopped green chilli, chopped garlic and saute them.
Later add boiled arbi, toss it and cook for 3-4 mins in low flame.
Then add salt, red chilli powder, turmeric powder and saute them.
Add besan and toss them. Let every piece get a coat with besan.
Once the besan is cooked, add some water, cover it with a lid and cook for 4-5 mins on medium flame.
Garnish it with chopped coriander and arbi ki latpati sabzi is ready to serve.
Arbi ki sukhi sabji
Ingredients
Mustard oil 2 tbsp
Ajwain 1 tsp
Dry red chilli 1 pc
Onion chopped ½ cup
Red chilli powder ½ tbsp
Salt ½ tbsp
Turmeric powder 1 tsp
Amchur powder ½ tbsp
Method
Heat a pan, add mustard oil, ajwain, dry red chilli and let it splutter.
Then add chopped onion and saute them.
Once the onions are cooked to golden brown, add hing and saute.
Then add boiled arbi and mix it.
Then add salt, turmeric powder and toss them. Close the lid and cook it for 2-3 mins.
Then add red chilli powder, amchur powder and saute.
Arbi ki sukhi sabji is ready to serve.
