2 to 3 ripe bananas (mashed)
1 ½ cups all-purpose flour
1 tsp baking powder
¼ tsp salt
½ cup unsalted butter (softened)
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup/ half cup milk
Instructions:
1. Preheat oven: Set your oven to 350°F (175°C). Grease and flour a cake pan, or line it with parchment paper.
2. Mix dry ingredients: In a bowl, whisk together the flour, baking powder and salt. Set aside.
3. Mash the bananas: Peel the bananas and mash them in a bowl until smooth. You can leave some small chunks if you prefer.

Cream the butter and sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy (about 3 minutes). You can use a hand mixer or stand mixer for this.
5. Add eggs and vanilla: Add the eggs, one at a time, beating well after each addition. Then add the vanilla extract and mix.
6. Combine wet and dry ingredients: Gradually add the dry ingredients to the butter mixture in batches, alternating with the mashed bananas and buttermilk. Start and end with the dry ingredients, mixing gently after each addition until everything is just combined. Be careful not to overmix.
7. Bake the cake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
