Tonkatsu is a Japanese fried pork cutlet that is one of my favorite foods of all time. The combination of juicy pork and crispy outside, combined with the homemade katsu sauce makes for an amazing treat! This recipe is very easy as we don't have any hassle with deep frying as we are turning to an air fryer!

INGREDIENTS
TONKATSU
2 pork chops
Salt
1 cup panko bread crumbs
1/3 cup water
1/2 cup flour
1 egg
Cooking spray
SAUCE
2 tbsp butter + additional if needed
2 tbsp flour
1/4 cup ketchup
3 tbsp soy sauce
1 1/2 tbsp rice vinegar
3 tbsp brown sugar
1 3/4 cup water
SIDES
Rice + sesame seed garnish
Thinly sliced cabbage preferably (arugula was used in this video and it worked) + drizzle of mayo & katsu sauce

DIRECTIONS
1. Begin cooking rice.
2. Combine water, flour & egg in shallow plate to make batter.
3. Pour panko into a separate shallow plate.
4. Salt pork chops to aid with tenderizing. Cover pork chop with plastic wrap and tenderize using back of knife, rolling pin or meat tenderizer.
5. Dredge pork chops in batter and then cover with panko bread crumbs.
6. Add bread pork chops into air fryer basket. Spray top with cooking oil.
7. Cook in air fryer at 350 for 20 minutes. Flip half way into cooking and spray other side with cooking oil.
8. To make sauce - make a roux with flour and butter. Add additional oil if roux is too dry. Cook until roux turns brown.
9. Add ketchup, soy sauce, rice vinegar, and sugar. Stir well.
10. Add in water, half at a time. Stir well using a whisk and add in remaining water. Let reduce for 5 minutes - taste for seasoning. Finish with black pepper.
11. Serve a plate of rice with sesame seed garnish, side salad with mayo and katsu sauce, and the tonkatsu with sauce and optional drizzle of mayo.
