EASY Homemade Chocolate Pie
3 cups milk
½ cup cocoa powder
1 ¼ cup granulated sugar
⅓ cup cornstarch
¼ teaspoon salt
3 tablespoons butter
1 ½ teaspoons vanilla extract
Pie crust - Can be homemade or store bought. No judgment since the chocolate is the star of this recipe not the crust.
Preheat the oven to 400 - using a fork gently dock (poke the top) the bottom and sides of the crust. This prevents it from bubbling up during the baking process. Place the pie crust into the oven and bake for 15 minutes or until light golden brown. Remove pie crust from the oven and allow the crust to cool slightly.
In a medium saucepan, mix dry ingredients (cocoa powder, sugar, cornstarch, salt). Once all ingredients are mixed well, add milk, and place the stove on medium high heat (about 7) and whisk every 1-2 minutes. Once the mixture starts to thicken slightly, reduce the heat to medium (about 5 or 6) and continue to whisk. The mixture will come to a boil and begin “thumping” at this point. Whisk continuously for one minute after the mixture comes to a boil.
Remove the saucepan from the heat and add butter and vanilla extract; whisk until the butter has completely incorporated into the mixture. Pour into a pre-baked pie shell. Allow the mixture to cool at room temperature.
Once the mixture has cooled to room temperature, place in the refrigerator until cold. Slice and add whipped cream, meringue, or enjoy plain. ENJOY!
